Gram lentil Halwa (Chany ki Daal ka Halwa)

Ingredients
Gram lentil/ Chany ki daal 1/2 kg soaked in water for 6 hours
Sugar 1/2 kg
Fresh Milk 1kg
Green Cardamom 4
Green Cardomom powder 1 tsp
Khoya 1/2 cup *
Ghee 1 1/2 cups
Almond,pistachios for Garnishing
Method
Add lentils and fresh mill in a pot; cook on low flame till milk dries.
Cool & grind till fine paste.
Heat ghee add cardamoms ; fry ; add lentil mixture fry for 1/2 hour .
Add sugar ; fry till lentil mixture thickens ;fry ;
When halwa separates from sides ; add khoya cardamom powder cook for 10mins more; then spread this on greased tray sprinkle nuts ; make diamond shaped marks with a knife.
Let it cool completely ; cut & store in a airtight container.
* (u can use 1 cup full cream milk powder instead of khoya)

Sooji Ka Halwa - Semolina Halwa

Ingredients

  • 1 and a 1/2 cups sooji/ rawa
  • 1/2 cup ghee
  • 3/4 cup mixture of cashews (coarsely chopped ) and whole raisins/ sultanas
  • 3 cups hot water
  • 1/2 cup whole/ full cream milk
  • 1/2 cup sugar
  • 5 pods of green cardamom split open
  • Orange Food colour

Method

  1. Heat a deep pan on a medium heat and when hot add the ghee. When it melts, add the Sooji and mix well.
  2. Roast the Sooji (stirring frequently) till it begins to turn a very light golden color and give off a faint aroma. The roasted Sooji will have the grainy consistency of wet sand. Now add the cashews and raisins to the Sooji and mix well.
  3. While you are roasting the Sooji, in a separate pot and on medium heat, bring a mixture of the milk, water,food colour, sugar and cardamom to a boil, stirring often.
  4. When the Sooji is roasted, gently add the water and milk mixture, stirring all the while to prevent lumps from forming. If any do form, make sure to break them with the back of the stirring spoon so you get a smooth paste-like consistency. Cook the mixture till it is thick and begins to come away from the sides of the pan.
  5. Turn off the heat and allow the mixture to cool to a warm temperature. Serve now in individual bowls.

Gajar ka Halwa


Ingredients

Carrots  2 kg grated
Milk 1 ½ kg
Ghee 1 cup
Green cardamom 10 to 12 whole
Sugar  1 ¼ cup
Khoya  1 cup
Saffron  ½ tsp
Almonds and pistachio sliced 2 tbsp each

MethodPeel and grate carrots and cook in milk when milk half dries add sugar and cook till sugar water evaporates, heat ghee for green cardamom, add to carrot mixture and fry well for 20 minutes, lastly add Khoya, saffron, almonds and pistachio sliced, leave it on dum for 10 minutes. Remove and use.
