Spring Onion Bites

Ingredients

Spring onions with greens 250 gms finely  chopped
Gram flour/Baisan  3/4 cup
Ginger-garlic paste 1 teaspoons
Red chilli powder 1 1/2 teaspoons
Salt to taste
Crushed Corriander seeds 1 tsp
Water
Oil to deep fry

Method

Make thick batter of Gram flour/Baisan using water and all the remaning ingredients,mix well.
Heat oil in a wok. Drop small portions of the spring onion mixture with your fingers into hot oil and deep-fry till golden and crisp.

Bajray k kebab

Ingredients

Bief Mince ½ kg
Green chilies finely chopped 2 tsp
Ginger garlic 1 tsp heaped
Coriander seeds coarsely crushed 1 ½ tsp
Crushed red pepper 1 tsp
Allspice ½ tsp
Black pepper ½ tsp
Salt 1 tsp heaped
Spring onion finely chopped 1 cup
Coriander leaves finely chopped 2 to 3 tbsp
Tomato 1 large finely chopped
Bajra flour 2 tbsps heaped*
oil for frying

Method

Marinate Mince with salt, black pepper, ginger garlic, allspice, chili powder, coriander crushed, crushed red pepper and chopped green chilies for 30 minutes, then add in it chopped spring onions, tomato,corriander leaves & bajra aata, mix well then make round balls and deep fry kababs till light golden.
*note:If u dunt like flavour of bajray ka ataa use wheat flour.

Seekh Kebab Pizza/Basic Pizza Dough/Pizza Sauce

Ingredients for Basic Pizza Dough

Flour 1 kg
Oil 3/4 cup
Instant yeast 3 tbsp
Milk powder 4 tbsp
Caster sugar 2 tbsp
Eggs 2
Salt 1 tsp

Method

In one bowl, knead flour, oil, instant yeast, milk powder, caster sugar, eggs & salt with lukewarm water, make dough, keep it on grease tray,cover it and leave it for 1 hour for double.

For making thin and crispy crust

First make dough, roll 1/8 inch thin crust and spread on pizza pan. Bake for 10 minutes and take out for cool. Now spread pizza sauce, add filling ingredients, bake in oven for 20 minutes on 200 degrees C and serve it.

For making deep pan pizza crust

First make dough, when spread 1/2 inch, roll it, spread on pizza pan and leave for 1 hour. Bake for 40 minutes on 200 degrees C.

Ingredients for Pizza Sauce

Tomatoes 6 blended
Oil 2 tbsp
Salt, 1/2 tsp
Oregano leaves 1 tsp
Ketchup 1/2 cup
Orange red color food 1/8 tsp
White pepper 1/2 tsp
Crushed garlic 1 tsp
Crushed red pepper 1-1/2 tsp
Chilli garlic sauce 4 tbsp

Method

Heat oil in one pan and fry crushed ginger until light brown.
Now add tomato paste, salt, oregano leaves, ketchup, food color, white pepper, crushedred pepper & chilli garlic sauce and cook it until thick.
Then cool it and use it.

Ingredients for Seekh Kebab Pizza

Mince 6 ounces
Ginger garlic paste 1 tsp
Seekh kabab masala 1 tbsp
Capsicum Julian 1/2 cup
Tomatoes seeds 1/2 cup
Cubes of onion 1/2 cup
Oregano leaves 1 tsp
Pizza sauce 3 to 4 tbsp
Mozzarella cheese 3/4 cup
Cheddar cheese 3/4 cup

Method

For marination: Mix chopped mince, ginger garlic paste & seekh kabab and leave for 10 minutes.
Now in one pan, heat oil and fry it until it cooks well. Then give simmer of coal.
For Assembling: Roll pizza dough and spread on 10 to 11 inch grease pizza pan. Make cuts on base if it is thin crust.
Then bake for 10 minutes on 200 degrees C.
Now spread pizza sauce, spread cheddar cheese on top, then put cooked mince, capsicum julian, tomato cubes, onion cubes.
Then sprinkle oregano, mozzarella cheese & cheddar cheese.
Bake for 20 minutes on 200 degrees C or becomes crispy and upper layer becomes light golden.

Sindhi Biryani

Ingredients

Chicken 1 kg 12 pieces
Rice ½ kg boiled ¾ done
Yogurt 1 cup
Tomatoes 4 chopped
Oil ¾ cup
Green chilies 6 grinded
Coriander leaves 2 tbsp grinded
Whole mix spices 1 tbsp
All spice 1 tsp
Ginger garlic 2 tbsp
Chili powder 2 tsp
Salt 2 tsp + 2 tbsp for rice
Whole green chilies 8
Dried plums 10 to 12
Potatoes ½ kg peeled cut and fried
Brown onion 1 cup
Coriander leaves chopped ½ cup
Kewra water 1 tbsp
Yellow color ¼ tsp

Method

Heat oil fry onion light golden and remove, add chicken with grinded green chilies and coriander leaves, salt, chili powder, chopped tomatoes, fry well add ½ cup water cover and cook till chicken tender, add yogurt, fried onion grinded, cook till mixture thick add fried potatoes, whole green chilies, dried plums, boiled rice with salt and whole spices till ¾ done drain. In a pan put a layer of rice then chicken mixture, chopped coriander, top with remaining boiled rice, spread 2 tbsp oil or ghee on top, add kewra mixed with color, put on dum for 15 minutes.Serve hot with Salad & raita!

Doodh Dulari

Ingredients

Milk 2 liter
Condensed milk half cup
Corn flour 1 tbsp
Colored vermicelli ½ cup
Strawberry jelly 1 packet
Green jelly 1 packet
Rubri 250 gm
Cream 200 gm
Mix fruit cocktail 1 large tin
Small Cham Cham 250gm

Method

Cook 2 liter milk for 20 minutes till thick,add ½ cup colored vermicelli cook for 5 minutes then add corn flour 1 tbsp dissolved with ¼ cup cold milk to the milk in the pan, cook till thick, remove, cool completely add half cup condensed milk, 1 large tin fruit cocktail. Dissolve each jelly packet with 1 cup water and set till firm cut in cubes and add to the cooled milk with 200gm cream, 250gm small cham cham and 250gm rubri, mix all well. Serve chilled.

Keemay Ka Samosa/ Minced Samosa

Ingredients

Mince 250 gm (beef or mutton)
Oil 2 tbsp
Ginger garlic paste 1 tsp
Salt 1 tsp
Black pepper ½ tsp
All spice ½ tsp
Crushed red pepper ½ tsp
Coriander leaves 2 tbsp (chopped)
Green chillies 4 (chopped)
Onion 1cup (finely chopped)
Samosa Wrap/Manda patti 2 dozen
Egg 1 beaten

Method

In a pan, heat oil.
Add mince with ginger garlic paste.
Then add salt, black pepper, all spice, and crushed red pepper, cook for 10 minutes or till dry & done.
Remove in a bowl add coriander leaves and green chillies & Onions,mix well.
let the mixture cool,then wrap in samosa wrap and brush egg on last fold to bind/close it .
deep fry till golden Serve hot with Imli ki chutney.

Super Bird Sandwich

Ingredients

Chicken breast 2 (flattened)
Egg 1
Bread slices 4
Tomato sliced 4
Cheese slices 2
Wooster sauce 1 tbsp
Ketchup 1 tbsp
Flour 1 tbsp heaped
White pepper 1/4 tsp
Mustard paste 1/2 tsp
Salt 1/2 tsp
Bread crumbs as required
Butter spread on bread slices

Method

- Marinate chicken breast pieces with salt, pepper, mustard paste, Wooster sauce, ketchup, egg and flour,
- Coat marinated chicken in bread crumbs, and shallow fry.
- Apply butter on bread slices, put 2 cheese slices and grill for 2 minutes, top with salad leaves, fried chicken breast, 2 slices of tomatoes, cover with second slice of bread cut sandwich into halves.
- Serve with fries and Coleslaw salad.
