Double Decker Brownies

Ingredients for Black Brownies base..

Coco powder 1/4 cup
Ghee or unsalted butter 6 tabl spoon
Sugar powdr 1 cup
Eggs 2
Vanilla essence 1/2 tea spoon
Flour 1 cup
Baking powder 1/2 tea spoon
Salt pinch
Walnuts chopped 1/3 cup

Ingredients for Chocolate chip top layer..


Unsalted butter 1/3 cup
Ghee 1/3 cup
Sugar powder 1/2 cup
Brown sugar 1/2 cup
Egg 1
Vanilla ess 1 tea spoon
Flour 1 - 1/2 cups
Baking soda 1/2 tea spoon
Salt pinch
Chocolate chips 1/2 cup

Method:

First preheat oven .oil n flour the tray or rectangular pan or square pan .. Heat ghee/ butter melt it ..add coco pwder ..mix ..add sugar .egg .essens ..baking pwde salt ..beat well .. add flour n walnuts .beat .put this thicky batter in ready pan or tray..
Now make ur chocolate chip layer . Beat ghee n butter well .add brown sugar n sugar .beat well .add egg .essense .soda .salt .beat .add flour n chips .mix well .thick mixture ready .. spread this mixture over brownie layer ..use spatula or pallate knife ..level it .tap it ..bake it .. bake untill top layer becums golden ..check with tooth pick .leave to cool ..give it full rest to set .over nite rest is best .to cut nice equal slices .. then cut them in bars ..serve with drizzle chocolate sauce .i use melted chocolate to drizzle..

Almond & Honey Tart

Ingredients for short crust

Basic sweet paste
Ingredients
Butter 16 ounces
Caster sugar 12 ounces
Flour 24 ounces
Egg 1
Vanilla essence 1 tsp

Method

In a bowl cream together the butter and sugar until light and fluffy.
Add in eggs and beat well. Fold in flour and mix gently with finger tips until the dough can be
gathered into a ball. Knead lightly and chill dough for 30 minutes, use as required.(bake for 5 mins before filling..for this recipe)

Ingredients for filling

Almonds crushed 4 ounces
Butter 1 ounce
Sugar 1 ounce
Honey 3 tbsp

Method

In a pan add Almonds crushed 4 ounces, Butter 1 ounce, Sugar 1 ounce, Honey 3 tbsp.
Cook on low heat stirring continuously till the mixture thickens.
Pour and spread the filling in the half baked tart shells.
Bake at 180 degree C for 20 to 25 minutes.
Do not overcook or cracks will appear, cool until set and serve.

Chocolate n Jam Cookies


Ingredients

250g butter, softened
140g caster sugar
1 egg
2 tsp vanilla extract
300g plain flour
pinch of salt

Method

Mix 250g softened butter and 140g caster sugar in a large bowl,beat well, then add 1 egg and 2 tsp vanilla extract and briefly beat to combine. Sift over salt & 300g plain flour and stir until the mixture is well combined – you might need to get your hands in at the end to give everything a really good mix and press the dough together.
make a ball and divide it into 2
using the first half half dough add the coco powder to the dough and mix well cut with flower cutter ,place it on the baking tray make holes on the middle for the coco glaze/ filling (fill choc cookies after baking.)
use the last part off the dough roll and cut the biscuit place them on a tray Press a thumb print into the centre of the each biscuit about ½ inch deep, fill each centre with a drop of jam
Preheat oven 160 c,325 f,gas mark 3
bake cookies for about 15 minutes.

Ingredients for chocolate Glaze

Icing sugar 4tbsp cup
Butter 1/2 tsp heaped
Coco powder 1 tsp levelled
Water 1 tbsp
Method
In a pan put Icing sugar
Butter 1
Coco powder
Water , cook for 1 minute, till slightly thick and glossy.

Meethi Tikya

Ingredients

Flour/Maida 2 cups
Semolina 1/2cup
Ghee 4 tbsp
Castor sugar 4 ounce
Milk ½ cup to ¾ cup
Green cardamom powder 1/2 tsp
till/sesame seed 2tbsp
Desiccated coconut 4 tbsp
Ghee for frying (i hv used oil)

Method

Put all together Flour, Semolina , Ghee , Sugar , Milk , Green cardamom , Desiccated coconut ,,sesame seeds, knead well till it forms into smooth dough but hard dough(and do not add water to knead the dough.),cover n leave it for atleast half n hour, roll dough to a quarter inch thick cut with round cutter, deep fry on a low flame, Fry till light golden on low flame.

Oreo Truffles

Ingredients

Oreo 20 Sandwich Cookies
Cream Cheese Softened 4 oz
Milk/Dark Chocolate (melted) 1cup
Peanuts crushed 2tbsp

Method

Crush Oreos to fine crumbs in a food processor....or in a plastic bag using a rolling pin. Add 4 ounces of softened cream cheese,peanuts and 4tbsp of melted chocolate mix until well blended.
Roll this mixture into 20-22 balls, about 1-1.5 inch in diameter.
To easily coat truffles with the melted chocolate, add truffles, in batches, to bowl of melted chocolate. Use 2 forks to roll truffles in chocolate until evenly coated. Remove truffles with forks, letting excess chocolate drip back into bowl. Place truffles place on wax paper; Sprinkle powdered coconut, colorful sprinkles(optional)
Refrigerate until firm-for about half an hour.
To make it look more presentable wrap them individually with foil or any other fancy paper.

basic Cookies dough


Ingredients

  • 250g butter, softened
  • 140g caster sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 300g plain flour

Method

Sift over 300g plain flour and stir until the mixture is well combined – you might need to get your hands in at the end to give everything a really good mix and press the dough together.
now use your own imagination for shape and flavour.

Brownie Bites

Ingredients

• Chocolate kisses
• 2/3 cup butter or margarine, softened
• 1-1/4 cups granulated sugar
• 1 tablespoon water
• 1 teaspoon vanilla extract
• 2 eggs
• 1-1/2 cups all-purpose flour
• 1/2 cup Cocoa
• 1/2 teaspoon salt
• 1/4 teaspoon baking soda
• Powdered sugar

Method

1. Remove wrappers from chocolates; place in freezer while preparing and baking cookies.
2. Beat butter, granulated sugar, water and vanilla in large bowl on medium speed of mixer until well blended. Add eggs; beat well. Stir together flour, cocoa, salt and baking soda. Gradually add to sugar mixture, beating on low speed until blended. Cover; refrigerate dough about two hours or until firm enough to handle.
3. Heat oven to 180 C. Line 24 small muffin cups . Shape dough into 1-inch balls; place in prepared muffin cups.
4. Bake 11 to 13 minutes or until cookie surface is set. Cookies will appear soft and moist. Cool about 5 minutes on wire rack. Dust cookie tops with powdered sugar. Press frozen chocolate piece into surface of each cookie. Cool completely in pan on wire rack.

Red Velvet Thumb Prints

Red Velvet Thumb Prints

Ingredients

Butter softened 4 ounce
Sugar ½ cup
Flour 1 ¼ cup
Coco powder 1 tsp
Salt pinch
Red food color 1 tsp
Vanilla essence ½ tsp
White chocolate chips 1 cup

Method

Preheat oven to 180 degree C, line cookie sheet with butter paper, beat butter and sugar for 2 minutes until creamy on low speed, beat in flour, coco and salt until blended, add color and vanilla, mix well shape dough into 1 inch balls, place ball 2 inch apart on cookie sheet, press thumb into center of each cookie, bake for 12 to 15 minute until done, cool for 2-3 minutes quickly make identitation with end of wooden spoon, remove and cool on cooling rack, melt white chocolate chips for 30 sec in microwave, spoon into plastic piping bag, squeeze bag to fill each cookie let stand until set.

Oatmeal Cookies

Ingredients:

  • Oats – 3 cups
  • Flour - ¾ cup
  • White sugar – 1 cup
  • Egg – 1
  • Chopped & roasted nuts (your choice) – 1 cup
  • Chocolate chips – 1 cup
  • Raisins – 1 cup
  • Butter (softened) – ¾ cup
  • Vanilla essence – 1 tsp
  • Salt – ½ tsp
  • Baking Soda – ½ tsp
  • Cinnamon powder (optional) – ½ tsp


    Method

    Take baking trays and spray them with oil to avoid the batter sticking on them or instead you can place the baking sheets on the trays. Once that is done preheat the oven to 350 degrees.
    In a small bowl whisk flour, salt, cinnamon powder and baking soda and keep it aside for later use.
    Now take a large bowl and beat butter in it for a few seconds on a medium speed of your mixer (use hand mixer or electronic, depending on the availability) now add sugar in the bowl and beat till the mixture turns creamy. Add and beat one egg along with the vanilla essence to smoothen the mixture. Next step is to add the whisked small bowl combination in the large bowl creamy mixture and beat till it’s well integrated. Add raisins, nuts, oats and chocolate chips in the bowl and stir it slowly.
    Take a spoon to place the batter on the baking tray with suitable distance between them. With your oily or wet hands press down the cookies to give them shape and required thickness (0.5 cm).
    The cookies are ready to be baked in a preheat oven for about 15 min. let them cool for some time before removing them from the tray to avoid breakage.  If the cookies are too soft this means you have made some wrong measurements or the oven temperature was not set so avoid such mistakes and remember you can always check the cookies by pressing them in the middle and if they are not well spread you can assert a little pressure to give them proper shape.
