Pizza Tarts


Ingredients

1 kg package frozen puff pastry
1/3 cup plus 2 teaspoons Pizza sauce
1/2 packet KandNs Frozen Chicken tikka chunks
½ cup shredded mozzarella
Thinly sliced onion, green capsicum and tomatoes remove seeds.
Mixed herbs and oregano to sprinkle on top

Method

Place oven rack in the center of the oven, and preheat oven to 400 degrees F. Defrost frozen Chunks inside refrigerator until thawed. Heat a non-stick or lightly oiled pan. Spread already thawed Chunks in the pan turning them gently through heating over medium heat. Set aside.

Remove frozen pastry sheets from box and paper wrappings. Thaw pastry sheets at room temperature for about 40 minutes or until pastry unfolds easily, but pastry is still cold. Unfold pastry on a lightly floured surface. Now take muffins tray and grease each tray generously with butter or oil to avoid sticking of your tart. Coming back to our puff pastry, now roll it with your roller take flower shape cookie cutter and cut out as flowers as I did. Re-roll the scraps and cut more flowers, you should be able to get 24 flower shaped dough pieces. Center each flower over a mini muffin depression carefully.

Spoon 1 teaspoon pizza sauce into the center of each pastry flower tart, and spread to a thin layer. Place chunks over it and then sliced onions, capsicum and tomatoes. Sprinkle each tart with ½ tablespoon shredded mozzarella cheese. Generously sprinkle each with mixed herbs and oregano.

Bake in 400 degree oven for 13-17 minutes, rotating trays halfway through baking time, until the pastry is golden brown and puffed. Carefully remove from oven, place on a serving tray, and garnish with fresh herbs. Enjoy

Layerd Mince Pie

Dough Ingredients

all purpose flour/maida 1/2 kg
Yeast 2 tbsp
Sugar 2 tbsp
Salt 1/2 tsp
Oil 2 tbsp

Filling Ingredients

Beef mince 750 gms
Onions finely chopped 1 cup
Oil 1/4 cup
Salt to taste
Red chilli powder 1 tbsp
Ginger Garlic paste 1 tbsp
Crushed Corriander Seeds 2 tsp
All spice/Mix garam masala powder 1 tsp
Green chillies finely chopped 1 tbsp
Corriander leaves chopped 4 tbsp

Egg batter Ingredients

Eggs beaten 4
Clarified butter/Ghee 4 tbsp

Method for dough

mix dough ingreints in a bowl knead into soft dough using luke warm water.
leave it to rise for 1 hour then divide into 3 equal balls ,roll out into thin discs.

Filling

heat oil add onions fry till golden,
add ginger/garlic paste,salt,red chilli,crushed corriander,all spice & mince cook till tender.
add corriander leaves & green chilli ,keep aside let it cool.

egg batter

mix all ingredients in a bowl.

Assembling

Spread 3 tbsp of egg batter in a 9 inch pie plate
layer with 1 disc,then half mince filling & 3 tbsp of egg batter,
second disc,remaining mince,3tbsp of egg batter,last disc ,
press edges of pie,spread remaining egg batter on top.
Bake in a preheated oven at 200 C for 40 mins.
Flip over on a plate when cooled,cut into pieces & Serve.

Seekh Kebab Pizza/Basic Pizza Dough/Pizza Sauce

Ingredients for Basic Pizza Dough

Flour 1 kg
Oil 3/4 cup
Instant yeast 3 tbsp
Milk powder 4 tbsp
Caster sugar 2 tbsp
Eggs 2
Salt 1 tsp

Method

In one bowl, knead flour, oil, instant yeast, milk powder, caster sugar, eggs & salt with lukewarm water, make dough, keep it on grease tray,cover it and leave it for 1 hour for double.

For making thin and crispy crust

First make dough, roll 1/8 inch thin crust and spread on pizza pan. Bake for 10 minutes and take out for cool. Now spread pizza sauce, add filling ingredients, bake in oven for 20 minutes on 200 degrees C and serve it.

For making deep pan pizza crust

First make dough, when spread 1/2 inch, roll it, spread on pizza pan and leave for 1 hour. Bake for 40 minutes on 200 degrees C.

Ingredients for Pizza Sauce

Tomatoes 6 blended
Oil 2 tbsp
Salt, 1/2 tsp
Oregano leaves 1 tsp
Ketchup 1/2 cup
Orange red color food 1/8 tsp
White pepper 1/2 tsp
Crushed garlic 1 tsp
Crushed red pepper 1-1/2 tsp
Chilli garlic sauce 4 tbsp

Method

Heat oil in one pan and fry crushed ginger until light brown.
Now add tomato paste, salt, oregano leaves, ketchup, food color, white pepper, crushedred pepper & chilli garlic sauce and cook it until thick.
Then cool it and use it.

Ingredients for Seekh Kebab Pizza

Mince 6 ounces
Ginger garlic paste 1 tsp
Seekh kabab masala 1 tbsp
Capsicum Julian 1/2 cup
Tomatoes seeds 1/2 cup
Cubes of onion 1/2 cup
Oregano leaves 1 tsp
Pizza sauce 3 to 4 tbsp
Mozzarella cheese 3/4 cup
Cheddar cheese 3/4 cup

Method

For marination: Mix chopped mince, ginger garlic paste & seekh kabab and leave for 10 minutes.
Now in one pan, heat oil and fry it until it cooks well. Then give simmer of coal.
For Assembling: Roll pizza dough and spread on 10 to 11 inch grease pizza pan. Make cuts on base if it is thin crust.
Then bake for 10 minutes on 200 degrees C.
Now spread pizza sauce, spread cheddar cheese on top, then put cooked mince, capsicum julian, tomato cubes, onion cubes.
Then sprinkle oregano, mozzarella cheese & cheddar cheese.
Bake for 20 minutes on 200 degrees C or becomes crispy and upper layer becomes light golden.

Kalizza Sandwich

Ingredients Ingredients for Dough

Flour 2 ½ cup
Salt 1 tsp
Sugar 3 tsp
Milk powder 2 tbsp
Egg 1
Oil 2 tbsp
Yeast 1 ½ tsp

Ingredients for filling

Chicken tikka chunks 1 cup
Mushrooms sliced 4
Olives 4
Oregano ½ tsp
Cheddar cheese ½ cup
Mozzarella cheese ½ cup
Pizza sauce ½ cup Mixed with tomato paste 2 tbsp

Method for dough

Put all ingredients together in a bowl, knead with warm water into a soft dough, leave to rise for 30 minutes, punch down dough, divide the dough into 6 parts, grease your  pizza plates/tray, roll the dough ½ inch thick , spread prepared sauce on half the portion, top with chicken tikka chunks, mushrooms, olives, oregano, both the cheese, then fold with the left plain portion into deep, press the corner edges well using fork, prick top with fork, brush with beaten egg, bake on 200 degree for 20 minutes. Cut in halves from center and serve.

Thin & Crispy Tandoori Chicken Pizza

Ingredients for pizza dough

Flour 2 ½ cup
Salt ½ tsp
Sugar 1 tsp heaped
Yeast 1 ½ tsp
Egg 1
Oil ¼ cup
Powdered milk 2 tbsp

Ingredients for filling

Pizza sauce 4 tbsp
Chicken 1 breast julienne
Tandoori masala 1 tbsp heaped
Lemon juice 2 tbsp
Ginger garlic ½ tsp
Onion 1 cut into square cubes
Broccoli - a small head ( cut into small florets )
Capsicum ½ cut into square cubes
Cheddar cheese 1 cup
Mozzarella cheese 1 cup
Oregano leaves 1 tsp
Method for dough
Put all the ingredients in bowl Flour 2 ½ cup, Salt ½ tsp, Sugar 1 tsp heaped, Yeast 1 ½ tsp, Egg 1, Oil ¼ cup, Powdered milk 2 tbsp, knead with Luke warm water into a soft dough, leave to rise for an hour, punch down dough, roll to a 9 inch round, spread in a greased 10 inch pizza plate, prick with fork and bake blind for 8 minutes, remove, cool, spread with pizza sauce, 2 tbsp of cheddar cheese, chicken, onion,brocli and capsicum, oregano and both the cheese, re-bake for 20 minutes on 200 degree C.

Method for chicken

Cut chicken into julienne, marinate with Tandoori masala, ginger garlic and lemon juice, pan fry in 2 tbsp oil, give dum of coal and use.

Pizza Pinwheels

Ingredients

• 2 cups self-raising flour
• Pinch of salt
• 90g butter, cut into cubes
• 2/3 cup milk
• Plain flour, to dust
• 3 tbpsn Pizza Sauce
• 1 cup grated cheddar cheese
• Chicken tikka chunks 1 cup
• Capsicum 1 finely chooped
• Oregano 1 tsp
• 1 egg, lightly beaten

Method

Preheat oven to 200°C. Line a tray with baking paper.
Sift the flour and salt into a large bowl. Use your fingertips to rub the butter into the flour until it resembles fine breadcrumbs. Add the milk mix into a dough.
Turn the dough onto a lightly floured surface and gently knead (about 5 minutes) until smooth. If the dough is sticky sprinkle with a little more flour.
Roll dough into a 20cm x 40 cm rectangle and spread with pizza sauce. Sprinkle with chicken tikka chunks, capsicum, oiregano and cheese.
Turn the dough so the long end is in front of you and roll up. Slice into 10-12 pieces and place side-by-side on the tray.
Brush with egg and bake for 25 minutes or until a skewer inserted into a ‘join’ comes out clean.

Chicken Alfredo Pizza

Ingredients for pizza dough

Flour 2 ½ cup
Instant yeast 1 ½ tsp
Salt ½ tsp
Sugar 1 tsp heaped
Oil 2 tbsp
Chicken powder 1 tsp
Luke warm water to knead

Method for pizza dough

Put all in a bowl Flour 2 ½ cup, Instant yeast 1 ½ tsp, Salt ½ tsp, Sugar 1 tsp heaped, Oil 2 tbsp, Chicken powder 1 tsp and knead with Luke warm water into a soft dough, bang dough well, keep the dough in greased bowl, leave it covered till doubled for an hour, punch down the dough, grease pizza pan, roll dough and put on the greased pan prick with fork.

Ingredients for filling

Boneless chicken 8 ounces
Garlic paste 1 tsp
Salt ½ tsp
Black pepper ½ tsp
Soya sauce 1 tbsp
Lemon juice 1 tbsp
Wooster sauce 1 tbsp

Ingredients for alfredo sauce

Butter 2 ounces
Crushed garlic 1 tsp heaped
Milk ½ cup
Cream ½ cup
Cream cheese 4 cubes
Salt ½ tsp
Black pepper ½ tsp
Crushed red pepper 1 tsp
Mixed herbs 1 tsp
Parsley chopped 1 tsp
Soya sauce 1 tbsp

Ingredients for topping

Mushrooms sliced 4
Olives 4 sliced as required
Jalapeno pepper as required
Onion chopped 2 tbsp
Oregano 1 tsp
Cheddar cheese 1 cup
Mozzarella cheese ½ cup

Method for chicken

Marinate chicken with Garlic paste 1 tsp
Salt ½ tsp
Black pepper ½ tsp
Soya sauce 1 tbsp
Lemon juice 1 tbsp
Wooster sauce 1 tbsp, pan fry in 2 tbsp oil till done.

Method for alfredo sauce

Heat butter add crushed garlic, sauté for few seconds add in milk, cream, seasonings, cream cheese, cook till thick, remove and cool.

To assemble

On your pizza base spread alfredo sauce, top with chicken toppings, cheddar and mozzarella cheese, bake in a preheated oven 200 degree for 20 minutes.

Four Seasons Pizza

 Ingredients

  • Olive oil2 tsp
  • Cheddar cheese, grated½ cup
  • Mozzarella cheese, grated1 ½ cups
  • Ingredients for BBQ Chicken
  • Onion chopped1 tbsp
  • Chicken chunks, boiled½ cup
  • BBQ sauce3 tbsp
  • Margherita Pizza Square
  • Parmesan cheese, grated1 tbsp
  • Tomato, sliced1
  • Thin fresh basil strips1 tbsp
  • Hawaiian Pizza Square
  • Pizza sauce2 tbsp
  • Smoked sausages, sliced½ cup
  • Pineapple tidbits, drained¼ cup
  • Pepperoni Pizza Square
  • Pizza sauce2 tbsp
  • Pepperoni4 slices

    Method

    1. Place pizza dough on cookie sheet. Starting at center, press out dough into a rectangle. Brush dough with olive oil. Bake 6 to 8 minutes.
    2. Sprinkle Cheddar cheese in the shape of a “plus sign” on crust, dividing the crust into four squares. Top each square with 1 of the 4 variations listed above to make 4 different squares. Top entire pizza with mozzarella cheese. Bake 10-13 minutes longer or until crust is deep golden brown and cheese is melted and bubbly.
