Blueberry Sauce

Ingredients

2 cups fresh or frozen blueberries
1/4 cup water
1 cup orange juice
3/4 cup white sugar
1/4 cup cold water
3 tablespoons cornstarch
1/2 teaspoon almond extract
1/8 teaspoon ground cinnamon

Method


In a saucepan over medium heat, combine the blueberries, 1/4 cup of water, orange juice, and sugar. Stir gently, and bring to a boil.
In a cup or small bowl, mix together the cornstarch and 1/4 cup cold water. Gently stir the cornstarch mixture into the blueberries so as not to mash the berries. Simmer gently until thick enough to coat the back of a metal spoon, 3 to 4 minutes. Remove from heat and stir in the almond extract and cinnamon. Thin sauce with water if it is too thick for your liking.

Mint-Cucumber Raita

Ingredients:

2 cups thick yogurt, whisked till smooth
1/2 cup mint leaves chopped fine
1 large cucumber grated
3/4 tsp cumin powder
1/4 tsp red chilli powder
1/2 tsp sugar
Salt to taste

Method

Mix all the ingredients together in a large bowl and blend till mixed well.
Chill and serve.

Potato Chops With Tomato Sauce


Ingredients

• ½ kg mutton chops
• ½ kg potatoes
• Salt, pepper, vinegar
• 1 egg, bread crumb
• 1 oz butter
• 1 oz. milk
• 1 cabbage or salad, 3 tomatoes for serving.

Method

Cut the chops into different pieces and keep on boil, till they are ready, with a little water.
Take out the chops(do not throw away the stock} and add into them ½ dessert spoon of vinegar, ½ teaspoon of salt and ½ teaspoon of pepper. Mix.
Mash the potatoes and add into them butter, milk and ½ teaspoon of salt. Mix. Take one chop, cover it with potato, letting the end of the bone, to remain outside, dip into an egg and then into bread crumbs and then fry. Treat all the chops in the same way.


Tomato sauce


Ingredients

• tomato puree ½ cup.
• 1 tablespoon vinegar
• 1 teaspoon sugar
• ¼ teaspoon salt
• 1 pinch red chilli powder
• ¼ in ginger.

Method:

In a sauce add puree, vinegar, sugar, salt, ginger chopped, chilli powder and keep onto boil until thick. Keep aside.
Serving keep the potato chops, in the centre of a plate, with bones pointing upwards. Put some leaves (whole) of the salad in the centre. Cut the tomatoes into rings and serve on sides. One ring of a tomato and one leaf of salad and so on. Serve the sauce in a jug. While eating pour it over the chops & Serve.

Garlic Sauce


Ingredients 

Yogurt 1 cup
Garlic paste ½ tsp
Salt and white pepper ¼ tsp each

Homemade Tartar Sauce

Ingredients

1 cup mayonnaise
1/2 cup chopped dill pickles
1 teaspoon capers, chopped
2 teaspoons Dijon mustard
2 teaspoons chopped shallots
2 Tbsp chopped scallions
2 teaspoons lemon juice
6 drops Tabasco sauce or more to taste
Salt and pepper to taste

Method

  1. Mix all  ingredients together in a bowl & serve!
Homemade Tartar Sauce

    Ingredients

    200gms Tamarind (Imli)
    300gms Jaggery (Gur) grated
    2 tsp Roasted cumin (Jeera) Powder
    2 tsp Red chilli powder
    Salt To Taste
    1 tsp Black salt
    1 tsp Garam Masala

    Method


  • Add 5 cups of water to tamarind and bring to er the flame and cook for 10 minutes.
  • Strain it and add the jaggery, chilli powder, cumin powder, salt, garam masala and mix well.
  • Cook again on medium flame till jaggery dissolves completely and the chutney gets semi thick(not too thick).Let it cool & Serve!
